Tequenos with Guaca + Aji De Gallina + Purple Corn Pudding

Tequenos with Guacamole as a starter is one of my favorite apps. Tequenos are a classic for Peruvians celebrations and consists on a wonton dough filled with cheese. I pair it with fresh guacamole.

Aji de Gallina, gallina actually means hen, but this dish is made with chicken(even in Peru!). So this is a chicken dish with a Yellow Peruvian pepper sauce. It's typically spicy, but could make it mild. Could go with white/brown rice or some veggies if prefer. I could also serve it with quinoa.

Purple Corn Pudding, is made from purple corn essence with some pineapple and cinnamon. Sweet and refreshing at the same time.
